Del Maguey Pechuga Mezcal

The Del Maguey Pechuga mezcal is defined by rarity. Its production period is limited due to special ingredients – wild mountain apples and plums – that are highly seasonal and can't be substituted. They're added as part of the spirit's third distillation alongside red plantain bananas, pineapples, almonds and a small amount of uncooked white rice. Finally, a whole chicken breast –the 'pechuga' – is suspended in the atmosphere and allows the mezcal's vapour to condense with a smooth, balanced finish.
